Crystals always work for the highest good of all and we cannot effect or change other people's freewill or choices, even with the stones we gift to our loved ones. If it was her intention to draw other suiters to herself with her Rose Quartz, then it's a possibility yes that it may happen, but a stone won't go out of its way to attract people who aren't meant to be on someone's path.
If it's a big concern for you, I'd recommend choosing a crystal together or a pair of Rose Quartz stones, one for each of you, as a symbol of your relationship and love for each other.
