I had my gallbladder removed a long time ago, but since then I have essentially had to "live on" acid reducers, etc. I am commiting to change my dietary habits and avoid spices and oils. Do you have any crystals and/or minerals you could or would recommend to assist me?

To aid you in sticking with your new diet, I would recommend wearing or keeping handy Onyx -in the variety of your liking. If you wear it, you will need to clear it regularly as it will absorb the negative energy of temptation and old habits. Speaking of which, Black Obsidian can be helpful for breaking free of patterns and behaviors that no longer serve your highest good.
For general digestive system health, Orange Kyanite is a good crystal to have around. Using the indirect method of charging water, you could charge your daily drinking water and sip it throughout the day to encourage digestive health. By "indirect method," I mean, charging the water with the crystals outside the class rather than in the water.
And this is just a final thought: food can be energized with crystals. As you are going to be going without oils and spices, you might want to charge some of your food in a Quartz grid to optimize their freshness and flavor as well as their nutritional value. I’ve noticed that my crystal-energized produce always has a little more flavor than what I haven’t charged.
