I own a number of originally single-terminated large crystals which have ALL formed new crystalline points on their broken end to a greater or lesser degree over the 20-25 years I've had them and worked with them. By this I mean that the rough end gradually, over the course of years, "grew" into a field of numerous points- some with hundreds of tiny glittery points, others a surface of more organized, larger structured points of up to 1/4" each. How do they do that in the absence of water or other solution with nothing touching them but the air, household humidity, and me? A scientific answer would be SO SO SO appreciated! Thanks!

There could have been a lot of changes to your crystals' environment over the years that caused them to grow in the ways that they did. You should be able to find a lot of information about these processes online, perhaps even some youtube videos could help as well.
