Thanks for your email.  You are correct that crystals with another mineral inside are called included crystals.  Phantom crysals are a special type of included crystal where the inclusions have formed in a layer that has a similar shape to the crystal that it has formed within.  Thus, the phantom inclusion occurred because as the crystal was forming, a layer within the crystal formed with this inclusion and then the crystal continued to grow and form overtop of the phantom layer.  Below, I have included pictures of two types of crystals that we carry so that you can see the difference:
