My question is this: As a Shaman, one of the abilities is as a Dream Walker (similar to astral projection). I wish to develop this ability more fully, such as controlling who I talk to and where I go. I was wondering which crystals would give me more control over the dreams and help me to remember them more fully.

Dreams are a way to connect with our higher self. To gain answers to questions, to receive information from Divine Source/Universe/Father/Mother/God. There are a number of crystals that can assist in the realm of dreams. For instance, Amethyst helps to inspire dreams and Moonstone can enhance the dream experience.
I think for you, Nephrite Jade would be a good choice. Nephrite Jade can be used during dream work to enhance the experience, remember the dream in detail and bring back valuable insights.
Strawberry Quartz is often recommended to aid in remembering dreams.
Lucid Dreaming is, "A dream state in which one is conscious enough to recognize that one is in the dream state and is then able to control dream events." I believe this is what you speak of when you state that you want to control who you speak with, where you go, etc.
Blue Kyanite can be used to promote lucid dreaming and astral travel. Put a piece under your pillow or inside of your pillow case.
Herkimer Diamonds have the capacity to aid in astral travel and lucid dreaming as well.
Prehnite induces lucid dreaming and dreams are made easier to remember while nightmares are reduced.
Or you can use a Double Terminated Quartz point to enhance lucid dreaming.
